Black rice with marinated vegetables in soy and avocado mayonnaise

Ingredients

FOR THE SALAD:

100 gr. Black rice

1 pc. Carrot

1 pc. Zucchini

1 pc. Fresh onion

30 gr. Ginger pickled

10 gr. Rice vinegar

20 gr. Sweet & sour sauce

30 gr. Soy sauce

FOR THE MAYONNAISE:

50 gr. Avocado

50 gr. Mayonnaise

Lemon juice

Method

  • FOR THE SALAD:

  1. Put the rice in a bowl, cover with cold water and let it soaked for 30 minutes to 1 hour.

  2. Rinse the rice and put it in a pot with plenty of water to boil, over medium heat (the cooking time varies depending on the type of rice, so we read what is written on the package or better try the rice when it boils).

  3. Cut the carrot and zucchini like spaghetti or into strips with the peeler, put them in a bowl with the onion and ginger.

  4. Add the soy, vinegar, sweet and sour sauce and mix well.

  5. Allow the vegetables to marinated for 30 minutes, stirring gradually.

  6. Taste the rice if it is ready, strain it, cool it with cold water and let it drain very well.

  7. Pour the rice into the bowl with the rest of the ingredients and mix gently.

  8. Serve the salad with avocado mayonnaise.

  • FOR THE MAYONNAISE:

  1. Blend first the avocado with salt and lemon juice until it becomes cream.

  2. Add the mayonnaise (homemade or store bought) and beat until smooth.

  3. Pass the mayonnaise through a fine sieve, optionally for a better texture.
