Noodles with pancetta

and blue cheese

Ingredients

 

150 gr. Egg noodles

120 gr. Panceta in medium cubes

40 gr. Mushrooms

100 gr. Tomato fresh sauce

30 gr. Dry red wine

20 gr . Blue cheese

1/2 pc. Orange zest

Garlic oil

Salt

Black pepper

Rosemary

Method

  1. Boil a pot with plenty of water, well salted.

  2. Marinate the panceta with olive oil, salt and pepper.

  3. Put the noodles to boil for 3 minutes, drain and cooled directly under running cold water.

  4. Saute the panceta in a hot non-stick pan with olive oil until it gets a nice golden color.

  5. Add the mushrooms and let them cook for 2 minutes.

  6. Pour in the wine and let it evaporate.

  7. Put the sauce in the pan and let it simmer until to thicken, after add the noodles and stir it.

  8. Remove from the heat and add the zest and cheese.

  9. Mix very well until to incorporated all the ingredients together.

  10. Serve the noodles hot.
