250 gr. Lukewarm water

7 gr. (1 pack) Dry yeast

30 gr. Sugar

20 gr. Olive oil

60 gr. Tahini

200 + 240 gr. Flour 00

20 gr. Salt

Sesame seeds

Method

  1. Pour the lukewarm water with the yeast, sugar and 200 gr. flour in the bucket of the mixer, mix with the whisk until to incorporate all the ingredients and let the mixture for 15 minutes to activate the yeast.

  2. Add the olive oil, salt, tahini, the rest of the flour to the bucket and knead with the hook at a medium to high speed for 8-10 minutes to make a soft and elastic dough.

  3. Brush the inside of a bowl with olive oil and transfer the dough to rest, covering it with a plastic wrap for 1-2 hours until it doubles in size.

  4. Put in a bowl about 1/2 liter of water and 2 tbsp. sugar, stir to dissolve the sugar. In another one bowl put sesame seeds or other seeds of your choice such as poppy seeds, sunflower seeds, etc.

  5. Preheat the oven to 200 ° C fan.

  6. Brush with oil the working surface, put the dough and cut into 8 equal pieces weighing 100 gr. approximately (8pcs).

  7. Form each piece of dough into balls and keep them always covered so that they do not dry out.

  8. Shape each ball with our hands like a thick cord, about 30 cm and bring the two edges together to form a circle.

  9. Make sure all the bagels are the same diameter to cook evenly.

  10. Put a baking paper gun in our baking pan.

  11. Dip each bagel separately in the water, immediately after in the bowl with the sesame seeds and place it in the pan.

  12. Spray the bagels with water and leave them for 15 minutes before baking.

  13. Bake for about 15-20 minutes until they get a nice color.
