Soba noodles with coconut milk

Ingredients

100 gr. Buckwheat noodles (soba)

1 clove. Garlic

1 tbsp. Ginger

1 pc. Fresh onion

20 gr. Peppers

40 gr. Mushrooms

5 pcs. Cherry tomatoes

1/2 pc. Lime

30 gr. Soy sauce

100 gr. Canned coconut milk

1 tbsp. Chia seeds

Method

  1. Boil in a saucepan plenty of water, well salted.

  2. Soak the chia seeds in a half glass with water.

  3. Saute garlic, ginger, and onion in a pan with sunflower oil.

  4. Put the noodles to boil for 3 minutes, drain and cooled directly under running cold water.

  5. Add the mushrooms, the peppers and let them cook.

  6. Pour in the soy sauce, add the juice of half a lime, then add the coconut milk and let it boil.

  7. Finally add the cherry tomatoes, noodles and chia seeds.

  8. Mix very well until to incorporated all the ingredients together.

  9. Serve the noodles hot.
